We grind this high-grade Sri Lankan black pepper in small batches to achieve the freshest, most pungent taste of pepper. It is sifted through a series of screens to control grind size that enable us to produce ground pepper in a range of sizes from the just-barely broken large cracked to the powdery extra fine grind.

Surpassing the spicy hotness of black pepper, our Ceylon organic White Pepper is produced by removing the hard outer rind of the black pepper; it is used in flavouring dishes, sauces and soups.

 

Our Ceylon black pepper has a sharp, quick taste and a lingering aroma. We select only high density early harvest berries with a deep black hue.

High density is a sign of a pepper that has been harvested at the right time and that has been properly cured and dried.

The dark colour is indicative of an early harvest. When the black peppercorns are plucked and harvested as fresh peppercorns which are still yellow green in colour, they give a fleeting hotness and fresh taste. A quality pepper for your pepper mill.

Harvesting Ceylon Organic Black Pepper

It is obtained from perennial climbing vine, piper nigrum which is indigenous to this island. Sri Lankan pepper flowers twice a year during the Maha and Yala monsoon seasons (Literally, the Sinhala word Maha means bigger and Yala means lesser.) Two types of commercial pepper products are called black pepper from fully matured unripe berries and white pepper prepared from fully ripe berries.

 

 

 

Black pepper is usually hand-picked by women workers.
